The vine
This vine is located in the La Fontaine de Vosne parcel, named after the area where the source that feeds the Bornue spring flows. This small 0.2 hectare vineyard, where my grandfather had previously grown Melon de Bourgogne, had become a wilderness. We replanted with Chardonnay and achieved our first vintage in 1991. This limited production of white wine on our estate could have been called Vosne-Romanée if we had planted Pinot Noir. As our village does not allow white ‘Vosne-Romanée’ to be produced, this cuvée is marketed as Burgundy Chardonnay.
Vinification and ageing
After pressing the grapes whole, the must is left to settle for 24 hours in refrigerated tanks, then stored in its entirety in new barrels for three weeks. Alcoholic fermentation is carried out using indigenous yeasts. The wine is aged for 10 months in stainless steel tanks.
In April, the cuvée is racked following malolactic fermentation. Fining takes place in early July. Bottling takes place after light filtration, always before the next harvest.

Chardonnay
This is a Cuvée Originale, because if Pinot Noir had been planted in this terroir, it would produce a Vosne-Romanée Cuvée. As there is no appellation for a white Vosne-Romanée, it can only be called Burgundy Chardonnay. It is now a mature vineyard which produces a smooth wine with the clean minerality typical of a rare white Côte de Nuits.
