Winemaker versatility
Hubert’s humility stems from the nobility of the profession. He is everywhere: in the vineyards where he’ll soon be ploughing, in the cellar, in the winery for bottling and labelling. Over time, he’s honed his sense of responsibility and curiosity. He doesn’t like to put himself forward, preferring to forge ahead through teamwork weighing his words and refining his taste. And we should listen to him. His judgement is clear and precise.
His work is marked by the freedom to experiment and he is always trying something new and varying the flavours. He’s not afraid to try a German Pinot Noir and waxes lyrical about the Grand Cru Échezeaux during tasting sessions. He reminds us that wine is appreciated with patience, experience and memory, as much as with the palate.

Go-to wine
I prefer reds, their aromas, fruits and colours. A Vosne Romanée Bossières village wine, for example, the long finish, the lightness on the palate, or the strong personality of Vosne-Romanée Premier Cru Les Beaux Monts.
A life lesson
After a stint in Australia, he learnt one lesson. He confides that the future of vines are at risk due to water shortages. On the other side of the world, vineyards are often irrigated. That isn’t the case in Burgundy.
Favourite time of year
The return of spring, when the vines begin to awaken, the buds start to appear and the leaves begin to unravel. The most intense time of year when we pay close attention to how the plants are growing. It is this work that marks the beginning of a new vintage.
A special place: The cellar
The cellar is steeped in history. It has grown in size over the generations. Once the wine has been bottled, you can see the work that you put in over the year and the fruit of our labour.
